Originally trained as a biologist, Thomas Teffri-Chambelland is a baker, educator and entrepreneur. After teaching biology, he moved into baking and opened his first organic sourdough bakery in Sisteron in 2001. He later founded the École Internationale de Boulangerie, which he still runs today. Co-founder of Chambelland and founder of Bread Éditions, he is the author of Traité de boulangerie au levain and Panettone et viennoiserie au levain. His work takes a broad view of the industry, from grain to bread.
Entrepreneur and former baker, Victor Dosne has worked in digital, marketing and product development for more than ten years. He co-founded several tech ventures before going on to create and run his own organic artisan bakery.
Today, he works with startups and develops digital products, with a focus on growth, product and acquisition. Through Bread Accelerator, he brings this experience back to an industry he also knows from the inside: baking.
